So I read in the patch 1.0.4 release notes that "Fish in Norway will now spawn in bad weather" and I think—silly me—surely Ubisoft did not just fix it in Norway, but also in England.
Imagine my amazement—and really I should have known better—when I find out that, yes, fish spawn as they should in Norway, but they still don't in the seas of England!
Wasn't there a single developer who thought, "Hey, if coastal fish in Norway don't spawn properly, let's also check the spawning of coastal fish in England."?
Wasn't there a single developer who thought to check the forums, where it is stated repeatedly that this happens to ALL coastal fish and not just those in Norway?
Come on, Ubisoft, that's just sad.

Use your bow and then jump into the water to loot the dead fish. I've found it's much more efficient than the crappy fishing line.

The fish do spawn, but only if the weather is completely calm. The moment the weather changes and foam appears on the waves they despawn. Repeatedly reload a save (which randomises the weather) in a location where they should spawn until they do and then use your bow to catch them, which works a lot faster than using the fishing line since you may only have a small time window before they despawn.
Fish do spawn in coastal areas, but only if the sea is completely calm it seems. The moment even the slightest foam appears on the waves, the fish despawn. Since the waters of the rivers and lakes are always calm, fish spawn there as they should.
One way I've found to fish in the sea is to do a quicksave and then repeatedly reload that save until fish spawn (the weather is randomised with each load). And then hope that the water stays calm long enough to catch any fish.
Still, I haven't found any big flatfish or big mackerel either and I'm starting to doubt their existence.

I can't see any pattern to the freezes I experience. I've had the game freeze on me while just walking around Ravensthorpe, during cutscenes, on the map, inventory and other menu screens, once even on the main menu before I even had the chance to start the game. As far as I can tell it has nothing to do with the autosave function.
I've learned to quicksave often, which saves a lot of frustration. Unfortunately saving isn't allowed in restricted areas, so you just have to hope the game doesn't crash while you're there and you have to do everything over again.
On PC you can rotate the camera by holding the right mouse button.

Wolf Fang seems to be misnamed. Judging by the in-game image and the animal it's looted from, it should probably be called Snow Fox Fur or something. Many areas in Norway are teeming with them, for example around Valka's Hut.
I found lots of regular flatfish in the coastal areas between mainland Hamtunscire and the Isle of Wiht. I have yet to see a big one.
I don't know any specific locations where mackerel spawn, but I caught several in the coastal waters of Norway so they do exist, though they seem to be more rare than the others. Like with flatfish, I haven't found any big mackerel yet.
But as @JCar4327 mentioned, ocean spawns are currently messed up. They seem to only show when the sea is completely calm, and immediately disappear the moment the weather changes.
Same issue.
Despite the game prompting you to use RMB to aim, doing this will perform the left hand attack. This means that every time I want to fish, I have to set the RMB to Aim / Ranged Abilities, and revert back to Left Hand Action when done, which is inconvenient.
Please make it so that whatever button is set for the Aim action can also be used to aim when fishing.
